I love easy chicken meals. It seems that we eat chicken several times a week and I’m always on the look out for new and interesting ways to prepare it that are fast and easy.
This recipe for chicken with a tomato avocado layer on top and melted cheese is super easy and tastes delicious.
The dish uses very few ingredients, and is a two part recipe. Cook the chicken first on the stove and then place in the oven to melt the cheese and finish it off.
For extra flavor, I used an olive oil infused with sun dried tomatoes and basil. (affiliate link) It gave the chicken a really yummy flavor.
If you are looking to get heart healthy fats in your diet, avocados are the way to go, not to mention how tasty they are! According to the American Heart Association, good fats are those that can lower bad cholesterol levels and are beneficial when consumed in moderation.
