I first discovered this recipe years ago and it was described as a form of nachos but without all the chemicals that normally come in nachos. I’ve tweaked it over the years to make it my own version.
The recipe uses potatoes instead of tortilla chips and is a hearty and nutritious side dish or can be a complete meal for a vegetarian. It really is delicious and my whole family loves it.
The dish is made in much the same way as a scalloped potato dish, with layers of potatoes, onions and, in this cream, a mixture of fat free re-fried beans and salsa.
I use my own homemade taco seasoning for the spices. And for the layers between the beans, I am very sparing with the cheese, except for the top layer, so as to keep the calories down a bit.
Serve with with chicken enchiladas and you will have the whole family clamoring for more.
The dish is so easy. Just combine 1/2 jar of salsa, and a can of fat free re-fried beans. Layer potatoes and onions with a tiny bit of cheese, spread the bean mixture and repeat. Top with a generous layer of cheese.
Delicious as a vegetarian meal or hearty side dish.
